Intense aromatics of citrus blossom, nectarine, pineapple, and toasty brioche lead to flavors of lemon chiffon, yuzu, grilled peach, and almond paste. Tense and structured, the dense, ripe fruit gives way to quenching acidity and savory qualities. Fermentation: Long and slow taking 2-4 months to reach technical dryness. Fermented in New (88%) and Used (12%) French of various size format
Aging: 20 months in 88% New French oak and 12% used French oak. Various format size from 228L, 200L hogs heads, and 500L puncheons
